Introduction

Sort of a picked cabbage side dish. It goes quite well with Asian and European dishes. Sort of a picked cabbage side dish. It goes quite well with Asian and European dishes.

Ingredients

    1 medium (about 5" dia) head of Fresh Red Cabbage
    1/4 cup Olive Oil
    1/4 cup Vinegar
    1 tbsp Soy sauce (shoyu), low sodium
    2 tsp Sugar
    Dash of Black Pepper

Directions

1. Chop the cabbage into quarters and then into long thin strips.

2. Blanch the cabbage.

3. Drain the cabbage well, and then add cabbage with the rest of the ingredients into a 2 quart bowl (preferably one with a lid). Mix well. Tip: if it has a lid, you can put the lid on and shake it.

4. Cover and put in the fridge for at least 30 minutes.

Note: Soy sauce usually has wheat in it.
