Introduction

These happened in the kitchen the other day.
I wanted chocolate desperately!! BUT I wanted something healthy too. This was my compromise.

You can make breakfast s'mores by adding a few marshmallows and microwaving for a few seconds. My kids loved it! :)

Ingredients

    2 cups whole wheat flour ( we use soft white whole wheat )
    2 tsp baking powder
    1 tsp salt
    1/2 cup unsweetened cocoa powder ( we use dark cocoa)
    2 medium eggs ( one large would have been enough)
    1 tblspn olive oil
    1 1/2 cup 2% milk ( you may need to add half a cup of water depening on how this you like your pancakes, these were quite thick)

    8 tblspn Mini chocolate chips (topping)

Directions

Mix dry ingredients together, start stove as you normally would for pancakes. I always set my gas stove on 3 out of 10. Put skillet on stove, spray with nonstick spray or brush with a bit of oil, if you have nonstick then skip this step. In a separate bowl, mix wet ingredients. Combine wet and dry. Batter should be a little lumpy. Use a 1/3 measuring cup to measure your batter into the pan. Flip when edges have set. Remove from pan onto plate, top with chocolate chips. Serve warm.
