Ingredients

    1/2 cup frozen raspberries (no sugar added), thawed
    1 cup canned peaches in light syrup - peaches only
    1/3 cup reserved syrup from peaches
    3/4 cup rolled oats
    2 Tbsp. Splenda
    1/2 Tbsp Brown Sugar
    Dash Salt
    1/4 Tsp Ground Ginger
    1/8 Tsp Ground Nutmeg
    1/2 Tsp Ground Cinnamon
    1 Tbsp Smart Balance Margerine
    4 tbsp Fat Free Half and Half
    1/2 Cup Light, Fat-Free Whipped Topping (Like Cool Whip)

Directions

Preheat oven to 400 deg. F. Place berries, peaches & reserved peach syrup into a small baking dish (around 1 qt. capacity). In a separate mixing bowl, combine oats, Splenda, brown sugar, ginger, nutmeg, cinnamon & salt. Mix well, then cut in the Smart Balance with a pastry blender or a fork, working until the crumbles are pea-sized. Pour oatmeal mixture over fruit mixture in baking dish. Bake, uncovered for 15-20 minutes, or until hot and bubbly all the way through.
Remove from oven, let stand 1 minute. Divide cobbler into two serving dishes. Top each serving with 2 Tablespoons of the half and half, and then 1/4 cup of the whipped topping.
Makes two 3/4 cup servings.
