Ingredients

    Ingredients:
    *Wheat flour, white, all-purpose, unenriched, .75 cup
    Flour, whole grain, .5 cup
    Brown Sugar, .67 cup, packed
    Wheat germ, crude, .125 cup
    Cinnamon, ground, 2 tsp
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Egg, fresh, 2 large
    Applesauce, sweetened, .33 cup
    Vanilla Extract, 1 tbsp
    Carrots, raw, 2 cup, grated
    *Pineapple, canned, .5 cup, crushed


Directions

Whisk together dry ingredients. Then mix egg, applesauce and vanilla. mix into dry ingredients lightly and swiftly. Add carrots and pineapple. Drop by spoonfulls into 12 prepared muffin cups. Bake for 30 minutes or until golden brown and a toothpick inserted in the middle comes out clean

    Loved this recipe - try to lose baby weight while tricking my 16-month old into eating more veggies, this recipe was a winner. I actually made these in mini muffin pans and enjoyed the healthier sweet tooth alternative at only 66 calories each. - 10/27/11
