Introduction

Not your typical soft taco! A great summer fave. We always need extra avocado. The corn tortillas add depth and substance. Delicious. Fabulous when we need a quick, healthy dinner. Ingredients

    ½ c chopped frozen onion
    2 tsp bottled minced garlic
    12 oz lean ground turkey breast
    1/4 c craisins
    1 tsp chipotle chili powder
    ¾ tsp salt
    ¼ tsp cinnamon
    1– 14.5 oz can diced tomatoes
    8 – 6” corn tortillas
    ½ c. diced peeled avocado
    2 Tbsp slivered almonds toasted
    2 Tbsp chopped fresh cilantro

Directions

Number of Servings: 4
• 1. Heat skillet over medium high heat. Add onion, garlic, turkey. Cook 4 min or until turkey is cooked and crumbles. Add craisins, chili powder, cumin, salt, cinnamon & tomatoes. Simmer 6 more minutes until thickened. Stir occasionally
• 2. Warm Tortillas on griddle or in foil in low temp oven.
• 3. Serve turkey with tortillas, garnish with cilantro, avocado and almonds.
