Introduction
In the picture, I also added another 1/4 of the avocado, chopped, into the salad. I had just finished a hard workout and the extra good fat was welcome! Ingredients

1/2 C. cooked brown rice
1 green onion, chopped
1/4 tsp. curry powder, divided
4 leaves red leaf lettuce
9 slices English cucumber, peel on
1/4 small Haas (California) avocado
1/4 C. nonfat yogurt
1 clove garlic, minced and crushed with a pinch of kosher salt
2 Tbsp chopped cilantro
dash ground ginger
1 tsp. extra virgin olive oil
2 Tbsp chopped sun-dried tomatoes
pinch kosher salt
2.8 oz. white albacore tuna (I use ready-to-eat cups that require no draining)
Directions
Place the rice in a bowl and, if cold, heat in the microwave. Stir in the chopped green onion and half (1/8 tsp) of the curry powder. Toss with the cucumber, green pepper, and lettuce.
To make the dressing, puree the avocado with the yogurt, garlic, remaining 1/8 tsp. curry powder, cilantro, ginger, and olive oil. Toss with the salad. Top the salad with the tomatoes and the tuna.
Serves 1 as a large lunch, or 2 as a side salad.
