Ingredients

    1 TB olive oil
    2 lb. ground turkey breast
    1 lg onion, chopped
    2 garlic cloves, minced
    32 oz. reduced fat chicken broth
    30 oz. canned white beans, drained and rinsed
    1 tsp. ground cumin
    1 tsp. dried oregano
    1 tsp. chili powder-- chipotle variety if you have it-- adds a lot.
    lime juice from one lime.
    fresh cilantro


Directions

Spray skillet with cooking spray. Cook ground turkey, onion, and garlic over medium high until turkey is browned (about 20 minutes). Drain off fat.

Add turkey mixture and remaining ingredients to slow cooker. Cook on low for 4 hours.

Yields 1 cup/serving
