Introduction
It's always a treat to find foods that taste like they pack a big diet punch but are actually low calorie and low fat. That's how I came up with this recipe. I needed something that gave me protein without the added calories or fat. Nonfat yogurt did the trick while also adding a creamy richness without the added calories or fat! Ingredients

2 medium potatoes, baked and diced
3 tbsp scallions, chopped
2 tbsp Hormel bacon bits
1 tbsp Lipton Onion Soup Mix
1 cup nonfat plain yogurt
Directions
May be served hot or cold.
To serve cold: Bake potatoes using your preferred method. Allow to cool, then dice potatoes into half inch cubes. Chop scallion. Combine all ingredients in a medium bowl. Refridgerate for one hour. Serve.
To serve hot: Bake potatoes. Dice immediately into half inch cubes. For stove top cooking, combine all ingredients in a saucepan and heat thoroughly, stirring frequently. For microwave cooking, combine all ingredients in microwave safe bowl and cook for 1 minute on high. Stir and serve immediately.
Makes 4 servings.
