Want a low carb Mexican treat? Try these net 4 carb per serving quesadilla. Talk about yummy! Adios mi amiga(o)!!! You can even add avocado (or guacamole) and/or sour cream (without hardly raising carb count). You also can add any meat of your choosing and it stays low carb. Want a low carb Mexican treat? Ingredients

    Santa Fe Tortilla Company Carb Chopper Wheat Tortilla, 2 servings
    Spinach, fresh, .25 cup
    Onions, raw, 2 slice, thin
    Mushrooms, fresh, 8 slices (2 whole mushrooms)
    Pepperoni, 12 slice (1-3/8" dia x 1/8" thick)
    2% Mozzerella, 0.25 cup
    Amish Butter, 1 tbsp (or non-stick spray)

Directions

1. Thinly slice onions, mushrooms, and pepperoni.
2. Layer one tortilla with ingredients - mushroom, pepperoni, onions, cheese, and spinach. Top with other tortilla
3. Melt butter in pan or griddle (or spray the pan with pan spray. Place quesadilla on pan or griddle and cook 3-4 minutes until light brown. Flip quesadilla over and continue cooking on the opposite side an additional 3-4 minutes until tortilla is light brown and ingredients are heated throughout (you may have to mash down with spatula if too thick). If you are making more than one, serve right away or hold in a warm oven until all quesadillas are cooked. Remove from oven and cut each quesadilla into 4 triangles.

Makes 4 slices with 2 slices per serving

Note: If you want to be creative and add some grilled chicken or cooked ground beef in your quesadilla, you may need to add more cheese and have to use large spatulas for flipping.
