Ingredients

    1 cup all purpose flour
    1 cup whole wheat flour
    4 tsp baking powder
    3/4 tsp salt
    1 tsp cinnamon
    1/4 tsp nutmeg
    2 1/4 c applesauce
    1/4 c canola oil
    1 egg (slightly beaten)
    2 egg whites (slightly beaten)
    1 1/2 c oats

Directions

Preheat oven to 375 degrees.
1. Mix first 6 ingredients together throughly.
2. Mix applesauce, oil, egg, and egg whites in a seperate bowl.
3. Make a well in the center of the dry ingredients, add wet ingredients and mix just until moistened.
4. Gently stir in oats.
5. Spray muffin cups with nonstick cooking spray or line with baking cups. Fill muffin tin 3/4 full.
6. Bake for 18-20 min until toothpick inserted into center of muffin comes out clean.
Makes 18 regular sized muffins.
