Not a diet recipe but we all need a good treat from time to time. I received the basic recipe from my fiances Grandmother, but made a few changes. To my surprise, the first time I made it he said it was better than Grams!

Number of Servings: 16

Ingredients

    2 Cups All Purpose Flour
    2 Cups Granulated Sugar
    4 Cups Grated Fresh Carrots ( a pound)
    2 teaspoons Cinnamon
    2 teaspoons Baking Soda
    1 teaspoon Salt
    1 1/2 Cup Butter
    4 Large Eggs

    Frosting
    2 Cups Powdered Sugar
    1/2 Cup Butter - softened
    8 oz Cream Cheese
    2 teaspoons Vanilla

Directions

Preheat oven at 350. Grease two 8" square pans. Grate carrots. Combine flour, cinnamon, baking soda,salt. Melt butter in microwave (do not actually heat it). Mix sugar into the melted butter. Beat eggs, one at a time to butter mixture. Fold flour mix into butter mix. Add carrots and mix well. Pour into prepared pans. Bake until toothpick comes out clean. Cool in pan for 10 -15 mins. Remove from pans and place on cooling racks.

For frosting
Soften butter. Mix Cream cheese and butter well. Cream in powdered sugar. Add Vanilla.

*For a fluffy frosting, use a beater.

Once cakes are completely cooled place first cake on cake server and frost. Place second cake on top of the second cake and frost.

Makes 16 2" X 2" servings
