Introduction

Ingredients

1 tsp grated lime rind
1/4 cup lime juice
2 tbsp olive oil
3 cloves of garlic, minced
2 tsp chili powder
1/2 tsp salt
4 chicken breasts, skinless & boneless
2 tsp liquid honey
2 mangoes
1 red pepper
1 small red or sweet onion
Directions
makes 4 servings
In a small bowl, whisk together lime rind & juice, oil, garlic, chili powder & salt; set aside.
Cut chicken into 1-in cubes; place in a separate bowl. Pour half of the marinade over top & toss to coat; let stand for 20 minutes. Stir honey into remaining marinade; set aside.
Cut mango into 3/4 in cubes.
Core, seed & cur red pepper into 3/4 in squares.
Onto each skewer, alternately thread mango, pepper, onion and chicken pieces. Discard marinade used for chicken.
Place kabobs on heated BBQ or grill, brush with honey marinade. Continue cooking - turning and basting often until the veggies are softened & the chicken is no longer pink inside, about 8 - 10 minutes.
Serve with rice
