Introduction

These are really really good!!! Have them for a snack, or do what I do, which is have one before working out, and one before breakfast. I put 6 in a quart size ziplock bag and keep them in the freezer until I want them, then just keep one bag in the fridge. They are light, moist and REALLY good! :) Hope you enjoy!! Ingredients

    Wet Ingredients:
    3 cups fat free milk (skim)
    1 1/2 cups applesauce
    6 egg whites

    Dry Ingredients:
    3 cups old fashioned rolled oats (not quick or instant)
    3 cups whole wheat flour
    1 1/2 cups brown sugar
    1 tbs cinnamon
    1 tbs salt

Directions

In bowl #1: 3 cups oatmeal and 3 cups fat free milk (skim). Combine and let sit for 1-1/2 hours (until most of the milk is absorbed. Once absorbed, continue with the following steps.
In bowl #2: Wisk 6 egg whites until frothy, then add 1 1/2 cups applesauce. Combine this with the milk/oatmeal from bowl #1.
In bowl #3: Combine 3 cups whole wheat flour, 1 1/2 cup borwn sugar, 1 tbs cinnamon, 1 tbs sugar, 1 tbs baking powder, 1 1/2 tsp salt, 1 1/2 tsp baking soda. Wisk or mix with a fork to ensure they well mixed. Combine wet with dry ingredients only until mixed. Do not over mix or they will become tough.

Spray a muffin tin (I have a 12 cup muffin tin) with baking spray and fill each up 2/3 full. Sprinkle the top with blueberry flavored Craizins (Ocean Spray brand) and bake at 400 degrees for 20 minutes. Remove immediately and transfer to a cooling rack.

**Note, use one whole 6 oz bag of Ocean Spray Craizins, blueberry flavored. I divide the bag into three equal amounts (-which is how many "batches" I make at a time), that way I use the same amount for each muffin, which is approx 1 tbs.
