Number of Servings: 4

Ingredients

    4 filets Tilapia or other mild fish (3.5-4 oz. each)
    1 can dark red kidney beans, drained and rinsed
    1 large bell pepper, chopped fine
    1/2 medium onion, chopped fine
    1 cup frozen green beans
    2 cloves garlic, minced
    1 6 oz. can tomato paste
    salt & pepper
    cajun seasoning
    hot sauce (optional)

Directions

Preheat oven to 350. In a large bowl, mix kidney & green beans, onion, pepper, garlic, salt, pepper, cajun seasoning, and tomato paste (plus hot sauce if you like it).

On a baking sheet, lay a large sheet of foil flat. Pour bean and veggie mixture onto the middle of the foil. Place thawed fish filets on top, and season with salt, pepper, and more cajun seasoning.

Place another large sheet of foil on top, and tightly seal all four edges, folding and pinching the foil layers together. Bake for about 45 minutes or until the veggies are tender and the fish is done. Carefully open the foil packet and watch out for steam!

Serves 4 (1 filet and about 1 c. of the veggie mixture).
