Ingredients

    6 c kale loosely packed, chopped
    Juice of 1 lemon
    4 T EV Olive Oil
    3 cloves garlic, mashed
    salt and pepper to taste
    hot red pepper flakes to taste
    2/3 c parmesan or romano cheese, grated
    1/2 c freshly made bread crumbs from lightly toasted bread

Directions

Whisk together lemon juice, olive oil, garlic, salt, pepper, and a generous pinch of hot red pepper flakes. Pour over kale and toss well with hands. Add 2/3 of cheese and toss again. Let sit for 5-10 minutes. Add bread crumbs, toss again and top with remaining cheese.
