Ingredients

    16 oz boneless skinless chicken breasts, sliced into any size smaller pieces you like, but no more than a 1/2" thick
    1/2 cup Progresso Bread Crumbs - Italian Style
    2 Egg whites, lighted beaten
    4 large baking Potatoes, (3" to 4-1/4" dia.)
    4 tsp Olive Oil
    Creole Seasoning
    Pepper

    Variation: Add 1/4 cup parmesan to the breadcrumbs. It makes it even better!!

Directions

Step one:
Wash and place the potatoes in the microwave and hit the "baked potato" button! When finished, remove and let cool at least 5 minutes so you can handle them.

Step 2:
Preheat oven to 450 F.
Place breadcrumbs into one dish. Sprinkle with creole seasoning and black pepper. Place egg whites into another dish. Dip chicken pieces into egg white, then breadcrumbs on both sides. Lay onto baking rack or cookie sheet. (I like to use a cooling rack to bake on because both sides get equally crispy. Sprinkle with a bit of creole seasoning if desired. Place in the oven and begin baking. Bake 25-30 min. until you see some browning around the edges and peaks of the chicken pieces.

Meanwhile Place potatoes on a cutting board and slice each potato in half lengthwise, then cutting across each half to make perfect steak fries. For each sliced potato: place in a mixing bowl and drizzle 1 tsp olive oil, toss very gently just to coat being careful not to break up the potato too much (although they will still be super yummy). Then sprinkle with creole seasoning. Place the steak fries on a cookie sheet lined with tin foil.

Bake 450 for 15-20 min. until crispy and browned. If you time it right, you can add these to the oven and they will be perfectly done when the chicken is!
