Introduction

Ingredients

    1 Pillsbury Thin Crust Pizza Crust
    1.5 cups Ragu Light Sauce (about a 1/2 jar)
    16 oz. part skim mozzarella cheese, shredded
    1 cup frozen chopped spinach
    1 large tomato, diced (about 1 cup)
    1 medium white onion, chopped
    1 red bell pepper, coarsely chopped (about 1 cup)
    1 yellow bell pepper, coarsely chopped (about 1 cup)
    1 medium zucchini, sliced (about 1 cup)
    1 can (2.25 oz) sliced black olives
    1 tray (8 oz) sliced raw mushrooms
    1/2 package Hormel Turkey Pepperoni

Directions

1. Pop the tube of pizza crust and lay out crust on cookie sheet or pizza pan (use nonstick spray if needed for type of pan) and pre-bake until crust is lightly golden. Keep the oven heated at this temperature (usually 400 degrees).

2. Spread Ragu sauce over top of crust almost to edges.

3. Spread thawed spinach over the sauce evenly.

4. Sprinkle half of the shredded cheese over the pizza.

5. Spray a small skillet liberally with nonstick cooking spray and grill chopped onions until slightly translucent and soft.

6. Sprinkle all of the chopped ingredients evenly over the pizza.

7. Sprinkle the rest of the shredded cheese over the vegetables.

8. Arrange sliced zucchini, black olives, pepperoni, and mushrooms evenly over the pizza.

9. Place on the middle rack at the center of the oven and bake until center is HOT and cheese is melted (about 15-20 minutes).

10. When done, use pizza cutter (or sharp knife) to cut into 12 squares (3 cuts up/down and 2 cuts side/side). Let cool for 2-3 minutes, then serve. Makes 12 servings.

Optional: You can cut out about 60 calories and 6 grams of fat (almost 3 grams of it being saturated fat) by using only 8oz of cheese and 1 serving (about 17 slices) of pepperoni...OR you could leave off the pepperoni entirely for even better amounts if you like it vegetarian style.
