Introduction

Maybe the original recipe relies on store bought peanut buttter and that makes it creamier than using the all natural I get from Whole Foods, but this could be better. I'll take all suggestions! I also tweaked it for a more Asian style flavor. Ingredients

    1 tsp olive oil
    1/4 cup celery, diced (about 1 stalk)
    2 tbsp onion, diced
    1 clove garlic, minced
    1 cup low sodium vegetable broth
    2 tbsp peanut butter
    1/2 tsp ginger, minced
    pinch crushed red pepper
    1 tbsp lowfat plain greek yogurt
    2 tbsp cilantro, minced

Directions

in a small saucepan, heat oil over medium heat. Saute celery and onion until tender; about 4 minutes. Add garlic, cook 30 seconds. Add broth and bring to a boil. Add peanut butter, ginger, red pepper, and yogurt. Stir until peanut butter melts and everything is combined. Stir in cilantro.

Makes 1 serving.
