Ingredients

    1/3 cup soy flour
    1 cup brown sugar
    1/3 cup corn meal
    1/2 cup whole wheat flour
    1/2 cup regular flour
    3/4 cup bulgar wheat, soaked overnight in water to cover
    1/4 cup wheat germ
    2 scoops (60grams) soy protein
    3/4 tsp salt
    1 tsp salt
    1 cup almonds,ground
    2 large eggs
    3/4 cup yogurt
    3/4 cup buttermilk
    1 tbs. vanilla extract
    1/3 cup olive oil
    5 cups fresh cranberries or 3 cups dried cherrries

Directions

Mix dry ingredients and wet ingredients separately, then combine. After combining, add pre-soacked bulgar wheat, mix and add cranberries or cherries, depending on your choice, and mix. Fill muffin cups approximately 3/4 full.
Bake for 25 minutes at 350 degrees. Be sure to grease muffin cups if you are not using paper muffin cups. Yield 20 muffins
