Ingredients

4 cups sliced potatoes
1 cup thinly sliced onion
2 tbsp flour
1/8 tsp pepper
3/4 cup rice milk
1 cup chicken broth-low sodium
1.5 oz Armstrong light cheese, shredded
Directions
Slice potatoes and soak in water for 4 hours. Pour off water & rinse once.
Melt butter in 4 cup measuring cup in microwave. Stir in flour, pepper & sage. Whisk in rice milk & chicken broth. Cook on high for 4 minutes stirring after 2 minutes. Stir in half the shreddedcheese.Put half the potatoes in 3 quart casserole top with half the sliced onion. Pour half the sauce over and repeat layers. Top with remaining cheese.
Cook covered for 50 minutes. Remove lid and cook 25 minutes more. Makes 4 servings.
