    2 yams, chopped
    1 large piece of pumpkin, chopped
    1 onion chopped
    1 tin coconut milk
    1 thumb size piece of fresh ginger chopped
    chicken broth to cover veggies
    sqeeze of lemon juice


makes 12 1 cup portions
Brown the onions, yams, pumpkin with a little oil,about 5mins. Add chicken broth to cover veggies, add ginger and cook for 20 minutes till soft. Whizz it up with hand blender, add coconut milk, a little lemon juice, salt and pepper to taste. Let it simmer for another 5-10 minutes.
