Introduction

This is a wonderful flavorful and low sodium take on classic Itilian pasta recipes. It borrows flavor from Leeks rather than onions, turkey sausage rather than ground beef, adds the earthy goodness of mushrooms plus the crunch of celery in a surprisingly filling and easy to make entree! Ingredients

    2 leeks- washed and chopped
    8oz white mushrooms- sliced
    10 pitted kalamata olives- minced
    2 stalks celery thinly sliced
    4 patties Jenny O Turkey sausage( 2 servings) pinched into 10 pieces each and rolled into small balls
    2 cups classico tomato basil sauce( or comparable 50 cal per serving sauce)
    1.5 cups cooked salad shrimp- thawed
    8oz barilla plus spaghetti( cooked)
    $ Tbls parmesan* optional

Directions

In a large non stick pot over high heat- saute leeks, mushrooms, olives, celery, olive oil and sausage balls together stirring occasionally until veggies are soft and sausage is browned. Season with 1 teas salt free veg seasoning & 1/8 teas crushed red pepper flakes. Add sauce and heat till hot. Turn off heat and add shrimp- season with creole seasoning to taste- I use about 1/2 teas Tony Roma's brand.

Divide cooked pasta into 4 bowls and spoon sauce over pasta. *optional- sprinkle 1 Tble parmesan over each.

Makes 4 generous and filling servings!
