corn bread mix
2 eggs
1/2 cup unsweetened applesauce
2 cup nonfat milk
2 cups white flour
1/2 cup wheat flour
1 & 1/2 cups corn meal
4 tsp baking powder
1/2 tsp salt
jalapeno mix
1 cup finely chopped onion
2 cans corn drained
2 pds hamburger lean
1/4 to 1 cup jalapeno peppers fresh or canned
2 tablespoons n'orleanss cajun seasoning
1 tablespoon onion powder
1 table garlic powder
1 table chili powder
1 & 1/2 "16 oz" ricotta fat free cheese mixed with
1/2 cup colby monterey jack cheese shreeded
Directions
mix corn bread together set aside
in separete bowl
combine white flour,wheat
baking powder, salt shift three times
in separite bowl mix wet ingredients combine to dry
stir tell moist may have small lumps in it. don't over beat.
set aside
preheat oven to 350
sauta onions in canola oil
brown hamburger meat drain off grease
add corn, rocotta, colby cheese and jalapeno mix well add
spices mix well
put into ungreased 13x9 glass pan
pour cornbread mix on top put in oven
cook tell knife comes back clean 30 +min
