Ingredients

    320g pumpkin, diced.
    1/4 cup water.
    1/2 cup of low fat cream cheese/cottage cheese.
    1/2 cup of Splenda/Equal
    2 eggs.
    320 grams wholemeal self raising flour.
    60 grams processed bran.
    100 grams of pitten prunes..
    Sprinkle of ground cinnamon.

Directions

* Place pumpkin and water in a saucepan and simmer until tender. Cool and mash until smooth.
* Preheat oven to 200C p Coat a 12 cup muffin tin with cooking spray.
* Blend Cream cheese/spread & Splenda and add one egg at a time - make sure egg blended well.
* Fold in flour, bran and prunes until combined.
* Spoon into muffin tray and sprinkle with Cinnamon.
* Bake for 15-20 mins.
* Allow to cool before removing from tray.
