Ingredients

2 sticks margarine (I calculated for regular but usually use light)
1 cup white sugar
1 cup brown sugar, packed
1.5 cup white flour
1.5 cup wheat flour
3 eggs beaten
2 tsp of cinnamon, nutmeg, all spice and cloves
1 tsp of salt, baking soda, baking powder, and vanilla extract
about 3 cups of pumpkin (I get two 15 oz cans of pumpkin and don't scrape them out completely)
Directions
Preheat oven to 400 degrees
Mix margarine and sugars together, beat till smooth. Add eggs and mix in well. Add flour one half at a time and fold. Add spices and baking soda, baking powder, salt and vanilla. Mix until creamy, then add pumpkin and mix well.
Prepare 24 muffin tins (normal sized) and fill each to about brim.
Cook for 30-35 min. I rotate tins every 10 min. or so for even baking. I know they're done when the tops are slightly hard and non-sticky to the touch. Remove from oven and place on cooling rack - make sure they're out of reach from your dog. Mine ate a half batch on me before I could enjoy them!
note if making half batch - use one egg and cook about 25-30 min.
