Introduction

When it comes to quiche, I don't substitute anything or hide any calories, but I also like to pack in so many veggies that it's a full meal in itself. Ingredients

    4 eggs
    1 1/2 cups skim milk
    1 package frozen broccoli
    1 medium onion
    1 9' pie crust
    1 cup cheddar cheese
    1 tsp salt
    1 tsp pepper

Directions

Preheat oven to 350 degrees.

Steam the broccoli, then cut it into desired size (I like the smallest size possible, but bigger bites are never looked-down-upon!). Dice onion and place with broccoli in frying pan on low with a tiny bit of butter or oil, just until onion is brown (although sometimes I like to let the onions get soft). Remove from heat or set to simmer.

Beat eggs and milk together. Add salt and pepper.

Remove frozen pie crust from freezer. Layer bottom with half the cheese. Layer cheese with veggies, then pour egg mixture over veggies. Top with remaining cheese.

Bake for 30 minutes or until middle is set. Remove from oven and allow to cool and set slightly (middle will be slightly wet if served immediately).

Makes 8 slices.
