    4 medium potatoes (Yukon Gold)
    1 tbsp olive oil
    1 tsp salt
    1 tsp fresh ground black pepper

Directions

Dice potatoes. toss with olive oil, salt and pepper. spread out on greased (cooking spray) cookie sheet. Bake at 350 until tender and browned.
