Ingredients

1 or two pork tenderloin (about 1 LB each)
340 g package of Yves Veggie Ground Round - origional
4 tsp Italian Seasoning
black pepper to taste
dash of salt (optional)
1 small apple peeled and cored - and sliced
1/4 onion minced
1 tsp minced garlic
Directions
In pan brown ground round with onions and garlic. and Italian seasoning. Finely chop some of the apple and add that to the mixture.
slice the tenderloin lengthwise and pound out with a clever. Add veggie mixture to tenderloin. Roll up the length of tenderloin and secure sprinkle the outside with some pepper and (if you want) a touch of salt - tuck any extra veggie mixture into ends - If you find you have left overs just cook in pan juices and mix the remaining sliced apples in with it. Cover and bake at 350 for 45 minutes, uncover, spray with cooking spray or EVOO and cook for an additional 10-15 mins (until internal temp reads 160(med) or 170 (well done). (or sear stuff tenderloin on all sides until brown before baking and then bake covered for 50-60 min.
Slice and serve (we like it with Broc & baked potatoes)
