Ingredients

    1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
    2 cups Asparagus, fresh
    1.5 cups Shrimp, cooked (small, or large chopped)
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    8 tbsp Maple Grove Farms of Vermont Fat Free Honey Dijon salad dressing
    1 cup Tomatoes, chopped
    1 cup Yellow Peppers, chopped
    .75 cup Carrots, raw, shredded or julienned

Tips

Makes 10 - one cup portions


Directions

Cook quinoa according to package directions.
Steam asparagus until crisp tender.
Cool both to room temperature.
Combine with rest of ingredients and chill at least 4 hours or overnight.
Makes approximately 8 1-cup servings
