Ingredients

1/2 tbsp. olive oil
1 large sweet potato or golden kumara
1 tsp. cinnamon
1 tsp. ground ginger
2 tbsp. maple syrup
¼ cup light coconut cream
1/4 toasted slivered almonds (used for nutrition calculation), or pecans, or your favourite vegan toasted muesli
Directions
Peel sweet potato and cut into 1/4 inch thick cubes. In a heated skillet, place EVOO and potatoes into skillet. Add cinnamon, ginger, maple syrup and coconut cream. Stir until mixed together. Cover and simmer medium heat, stirring occassionally, until softened, about 20 minutes.
Remove potato from skillet, reserving liquid. Coursely mash potato until desired consistency is reached. Mix well.
Serve in mini ramikins, topped with some of the Nature Valley bar. Pour 1 tablespoon of reserved liquid before serving. You can also add a little fat free, sugar free whipped topping.
