Introduction

Ingredients

    1 medium red onion, chopped
    1 red bell pepper, chopped
    1 cup fresh broccoli, chopped
    1 cup mushrooms, chopped
    2 teaspoons minced garlic
    5 tablespoons extra virgin olive oil

    For Dough:
    2 cups white whole wheat flour
    1/4 tsp salt
    1/4 cup canola oil
    3/4 cup fat free milk
    1/4 tsp baking powder

    Garnish:
    reduced fat parmesan cheese
    parsley
    extra virgin olive oil

Directions

Heat 5 tablespoons of olive oil in a pan. Cook vegetables until soft. Place vegetables in a bowl and set aside. Pour in 1 tablespoon of olive oil into the pan and cook the ground chicken. After the chicken is cooked, combine the vegetables with the chicken in the frying pan. Season with 1 tablespoon of McCormick's Perfect Pinch Original Chicken Seasoning. Turn off the heat.

Preheat the oven to 400F while making biscuits. Combine the flour, canola oil, salt, baking powder, and milk. If dough is still sticky add a little more flour until you are able to work with it and it won't stick to your hands. You need to be able to place this dough out on a floured surface and roll it out.

Once the dough is rolled out into an oval shape, spread filling out, lengthwise, into the center of the dough. Top with the 4 slices of american cheese. Fold over the sides of the dough and pinch them together. Fold over the ends of the dough.

For a garnish, lightly brush with extra virgin olive oil and sprinkle on reduced fat Parmesan cheese and parsley. Bake in a 400F oven for twenty minutes or until dough is done.

Makes anywhere between six 2" X 4" servings. (Approximate)
