Ingredients

    3 cups fusilli
    1 1/2 cups chopped cauliflower
    3 cups chopped broccoli
    1 1/2 cups chopped ham
    1/3 cup chopped onion
    3 tbsp + 1 tbsp salted better
    3 tbsp flour
    1 1/2 cups milk
1 1/2 cups monterey jack cheese (mine had dill added)
    1 tsp Worchestershire sauce
    1/2 tsp mustard powder
    1/2 tsp pepper
    1/2 cups seasoned bread crumbs

Directions

This makes about 6 servings. I never measure, so these are all approximations.
Set your pasta to boil, and for the last 3 minutes of boiling, add the cauliflower and broccoli. Drain mixture in a colander.
In a medium saucepan, melt 3 tbsp butter. Add minced onions, and stir them around for 3 or 4 minutes, until they start to colour through. Add the flour, and whisk together, stirring often, for about a minute. Add a splash of the milk, whisk, and continue to add milk slowly until it's all combined. Add the Worchestershire sauce, black pepper, and mustard powder. Once the milk begins to steam, add the cheese in handfuls while whisking. When it's all melted, let it sit over medium heat for a few minutes, to blend it all together. Do not let it boil!
In a lightly greased casserole, combine the ham, the pasta mixture, and the cheese sauce. Melt the last tbsp of butter, stir it into the bread crumbs, and sprinkle it over the top of the casserole.
Bake at 350 for 30 minutes, and enjoy!
