Ingredients

* Baking Powder, .5 tsp
* Vanilla extract, imitation, alcohol, 1 tbsp
* Apples, fresh, 1.5 cup, quartered or chopped
* Walnuts, .5 cup, ground
* Brown Sugar, .5 cup, packed
* Cinnamon, ground, .5 tbsp
* Milk, 2%, 2 fl oz
* Cream Cheese, 4 oz
* Olive Oil, 1 tbsp
* Baking Soda, .5 tsp
* *Whole Wheat Flour, .66 cup
* *Bread Flour - Unbleached, King Arthur Flour, .66 cup
* Soy Flour, .66 cup, stirred
* Egg, fresh, 2 large
Directions
In a medium bowl, blend dry powders
In a large bowl cream the cream cheese, and sugar, add the eggs, vanilla, and stir.
Fold in the walnuts and grated apples
1/3 at a time, fold the blended dry ingredients into the large bowl. Blend a minimum time to mix.
Divide into 12 muffin cups
Bake at 350 F for 22 minutes, until toothpick comes out dry.
