Ingredients

two sweet potatoes, skinned and washed, diced to 1/2 inch
1.8 pounds pork tenderloin, trimmed of all visible fat
1 can tomatoes diced, zesty chili style
4 cloves garlic
1 can black beans, rinsed well first
1 cup low sodium vegetable broth
1/2 tsp salt
1 T cumin, ground
1 can Del Monte diced petite tomatoes, no salt added
2oz dry of spelt egg noodles (or other whole grain item)
Directions
ASSUME 10 servings, about 1/2 cup of this finished mixture over about 1/2 cup of brown rice or whole grain cooked pasta.
Cut pork and brown in fry pan in hot canola oil. Make sure all pieces are coated with some cumin/black pepper/salt before browning.
Put all ingredients into crock pot, allow to cook on LOW for about 7 hours or so.
at end of cooking time, stir in lime juice and cilantro (or dried parsley), and cook 5 minutes more.
