Number of Servings: 4

Ingredients

    Two Medium heads fresh Broccoli with stalks removed
    I medium onion
    1 tbsp butter
    1 tbsp olive oil
    3 cups ckicken broth
    1 bay leaf- remove at end of cooking
    1/2 cup Sour Cream

Directions

melt butter and olive oil in a medium sauce pan,
Saute onion until soft
Add broccoli florets and chicken broth
gently boil 10 minutes
cool 10 minutes
transfer to a blender and pulse until blended ( not velvety)
Transfer to 4 individual serving bowls
dolop with 1 tbsp sour cream and stir into soup.
