Ingredients

1/3 cup rolled oats
1/3 cup skim milk
1/3-1/2 cup water (depending on your consistency preference)
1 tbsp Chia seeds
1/2 medium banana, sliced very thinly
Pinch/dash of salt to taste
1/2 tsp vanilla extract
Directions
Bring water and milk to a boil. Add in oats and Chia seeds, return to a boil and then reduce heat to a simmer. Allow oats and chia seeds to thicken for several minutes. Once they have thickened, add the 1/2 banana and stir vigorously until the banana has blended in entirely with the oats. Add in the salt and vanilla at the end, and you are finished!
Recipe makes 1 serving. Kath loves to add anything to the oatmeal, so get creative... yogurt, cottage cheese, nut butter, dried fruit, granola, chocolate chips, fruit preserves, fresh fruit, etc.
