So good, but definitely a comfort food. Could make lighter by using healty request soup, lighter cheese, and skipping the butter and fresh mushrooms and just using canned mushrooms. Ingredients

    7 oz. thin spaghetti, broken in half
    2 C. cubed cooked turkey or chicken
    1 C. sliced fresh white mushrooms
    1 small onion, chopped (1/4 C.)
    3 T. butter or margarine
    1 can cream of mushroom soup
    1 C. skim milk
    1/4 tsp. poultry seasoning
    1/8 tsp. ground mustard
    1 C. (4 oz.) shredded cheddar cheese
    1 C. (4 oz.) shredded mozzarella cheese
    1 T. shredded Parmesan cheese

Directions

Cook spaghetti and drain. Put into greased 11 x 7 x 2" baking dish. Top with turkey. In a skillet, saute mushrooms and onions in margarine until tender. Whisk in soup, milk, and seasonings until blended. Stir in cheddar cheese until melted. Pour over turkey. Sprinkle with mozzarella and Parmesan cheese. Dish will be full. Bake uncovered at 350 degrees for 25-30 minutes or until heated through and cheese is melted. Makes 6 servings.
