Ingredients

    -2 C. uncooked rice
    -1/2 tsp. salt
    -1 C. sliced button mushrooms
    -2 tsp. cornstarch
    -salt and pepper to taste
    -1 lb. ground turkey
    -1 tsp. dried Thyme
    -1 C. beef broth
    -Cooking spray

Directions

Cook rice according to package directions.
Meanwhile, mix turkey, salt, and pepper. Shape into meatballs, set aside.
Spray large skillet with cooking spray and set pan over medium-high heat. Add mushrooms and cook 2-3 minutes. Remove from pan, set aside.
Add meatballs to pan. Cook until brown, turning frequently. Return mushrooms to pan. Add Thyme, salt, and pepper. Add 3/4 C. broth and bring to a boil. Reduce heat to medium, simmer until meatballs are cooked through.
Dissolve cornstarch in remaining 1/4 broth. Add to pan and simmer one minute.
Serve over rice.
