Introduction

Oven-roasted cabbage is SO much better than the steamed or boiled stuff I was served as a kid! Gluten-free, low-carb, and inexpensive. Suitable for PaNu. Ingredients

    1 head fresh cabbage
    1/2 stick butter (4 TBSP)
    4 slices thick-cut bacon
    1/2 tsp Lowry's seasoned salt (or to taste)

Directions

Preheat oven to 450 degrees F.

Melt the butter in the microwave. Cut the bacon slices into eighths, and cut the head of cabbage into eight wedges, removing the tough inner core.

Place the cabbage in a large roasting pan and drizzle with the butter. (At this point, some folks like to toss the cabbage in the butter so it's all scrumbled in the pan, some like to keep it in pretty wedges.) Sprinkle with seasoned salt and then sprinkle on the pieces of chopped bacon.

Place pan on center rack of the oven and let it cook for 30 minutes, flipping the cabbage halfway through. If you like, you can leave it in a few extra minutes to let the edges brown even more.

Makes 4 generous helpings.

(Obviously, non-PaNu folks can sub olive oil for the butter, and vegetarians can forgo the bacon.)
