Ingredients

    Zucchini, 3 cup chopped
    Sweet peppers (bell), 2 cup, chopped
    Onions, raw, 1 cup, sliced
    Feta Cheese, .5 cup, crumbled
    *Tomatoes, red, ripe, raw, 1 cup, chopped
    Couscous, 2 cup, cooked
    Olive Oil, 2 tbsp
    *Chickpeas (canned), 1 can
    *Yams, 3 cup, cubes

Directions

Chop vegetables. Toss with oil, salt to taste, and feta and chickpeas. Roast veggies for aout one hour at about 375 degrees. Cook couscous and add just before serving.
