Number of Servings: 10

Ingredients

    2 lbs Boneless Skinless Chicken
    2 Garlic Cloves
    1 small or ½ large yellow onion
    1 – 28 ounce can diced tomatoes
    1 – 15 ounce can pinto beans drained
    1 – can cream of chicken soup (leave condensed)
    2 tsp ground cumin
    1 tsp ground ginger
    1 tsp cinnamon
    ½ tsp ground coriander
    ½ tsp black pepper
    3 stalks celery

Directions

Cut the Chicken into nice size chunks.
Chop Garlic Cloves
Chop Onion

Put all of this into the crock pot and cook for about 4.5 hours.

I usually serve over egg noodles or jasmine rice.
