Ingredients

1 C. warm water
1 T. yeast
1 C. flour
2 russet potatoes, boiled
7 C. flour
1 C. additional water
1/4 C. olive oil
2.75 tsp. sea salt
Directions
makes 12 foccacia rounds for pizzas or side breads. Great to freeze and use.
activate yeast in 1 C. warm water and 1 C. flour.
While yeast is activating, rough cut and boil 2 potatoes, strain and let cool to room temperature.
Add 1 C. water, 7 C. flour, olive oil, salt, and potatoes to the yeast mixture and beat with a paddle or dough hook, just until a dough forms.
Set in a lightly sprayed or oiled bowl covered with saran wrap to raise. Let rest and raise for one hour. Divide into 12 pieces and flatten each piece. Allow to sit on sheet pans for 30 minutes, then make imprints with your fingers for a wavy, even surface on each dough round. Bake in a 350 degree oven for about 20 minutes with convection, turning once for even baking. Without convection, this may take 30 minutes. Bake until golden brown.
Freeze individually for easy use. Top with pizza toppings or use as a side bread.
