Introduction

Delicious by itself or served with warmed whole wheat pita bread. Delicious by itself or served with warmed whole wheat pita bread.

Ingredients

    1 can of tuna, packed in water, drained
    3/4 cup red onion, diced
    2 roma tomatoes, seeded and diced
    16 oz can great northern beans, drained and rinsed
    Salt and pepper to taste
    3 T extra virgin olive oil
    2 T red wine vinegar
    Juice of 1 lemon

Directions

Pour tuna into a bowl and break up with a fork. Stir in onion, diced tomato, and beans. season with salt and pepper. Toss with olive oil, vinegar, and lemon juice. Serve cold or at room temp.

Makes a great and filling lunch paired with some warmed pita bread and a piece of fruit.

    Very Good
    I made mine with minced scallions as opposed to red onion, added a couple dashes of Italian seasoning and served on tosses fresh spinach and leaf lettuce. A very tasty, fiber rich meal! - 5/10/11
