Introduction

Ingredients

    2 tablespoons of olive oil
    1 onion, chopped
    1 red bell pepper, chopped
    2 medium-large carrots, chopped
    5 stalks of celery hearts, chopped
    1 cup cooked black beans
    1 cup frozen corn
    1 cup (half a bag) of Morningstar Farms Grillers
    garlic salt, pepper, and taco seasoning to taste
    1 can no-salt-added kidney beans with liquid
    1 can no-salt-added diced tomatoes
    1 can tomato sauce
    1 can's worth of water

Directions

Chop the vegetables and add everything to the crockpot with taco seasoning, garlic salt, and a can of water (amount of water may depend on your desired thickness of chili). Do not thaw Grillers or corn. Mix well. Let cook in the slow cooker on low for 7-8 hours, or until the onions are translucent. Serve it with cornbread, spoon it on top of veggie hot dogs and whole-wheat buns, or eat it by itself!
