Ingredients

* Spinach, frozen, 1 package (10 oz) yields (

* Raisins, .5 cup (not packed)
* Olive Oil, 2 tbsp
Directions
Heat a large skillet - when it is hot enough to sizzle a drop of water, add pine nuts and toast the nuts for about 2 minutes (until the aroma emerges). Remove from heat.
Put pine nuts aside, and add olive oil to skillet. Add spinach and sautee until thawed. Add raisins and pine nuts and simmer until spinach is heated through, about 10 more minutes.
Serve as a side dish with Italian, Greek or other Mediterranean main courses.
