Introduction

You didn't think wonton soup was possible was a vegetarian? Well you were wrong! You didn't think wonton soup was possible was a vegetarian? Well you were wrong!

Ingredients

    Cabbage, carrots, ginger, soy sauce, sesame oil, ketchup, an egg, a pack of wonton wrappers, tvp.

Directions

Chop up cabbage and carrots, stir fry on med-high heat in a couple tablespoons of sesame oil until cabbage has cooked down and carrots are soft.

In a separate bowl, pour 1/4c boiling water over 1/2c tvp and stir to rehydrate. You may need to leave this to sit for a minute or two to completely rehydrate. Add ginger, soy sauce and ketchup.

Add cabbage/carrot mixture to tvp mixture, stir and allow to cool enough to be comfortable to handle. Mix in the egg.

Place one small teaspoon of this mixture in the middle of each wrapper, and fold however you'd like your dumplings folded (see the picture for how I like to fold them -- much prettier than the traditional lumpy ball on a noodle).

Soup: bring your broth to boil, add dumplings and boil for about 5 minutes.
Steamed: place on a heatproof dish inside a hot and steamy bamboo steamer, 5 min.
Fried: in a bit of oil until crispy.

Serving Size: Makes about 25 wontons, about 5 servings.
