Introduction

A dressing that makes a salad-hater want to eat salad! A dressing that makes a salad-hater want to eat salad!

Ingredients

    1/2 cup mayonnaise
    2 tablespoons honey
    1 tablespoon lime juice
    1 jalapeño pepper, seeded and coarsely chopped
    (optional) 1/4 teaspoon paprika and 1/4 teaspoon dry mustard

Directions

Toss everything into your blender or a mini-food processor and blend it just until it is mostly smooth. It makes a nice creamy dressing. The combination of honey, lime and jalapeño are delicious together and they definitely improve every kind of lettuce. I will say, I like a fairly simple salad with this dressing: lettuce, baby spinach, onions, cucumbers, zucchini and/or summer squash and not much else. Adding green peppers or tomatoes or cheese or craisins just seems to compete (in a bad way) with this delicious dressing!
