My husband loves this sweet bread and would eat it every morning for work. So after months I have made many changes and have made it from a traditional sweet bread to a healthier option. Number of Servings: 32

Ingredients

    3/4 C. Honey
    3/4 C.Sugar
    3 Eggs
    3/4 C. Applesauce
    1/2 C. Canola Oil
    1 TBSP Vanilla
    2 C. Grated Zuchinni
    1/3 C. Ground Flax
    1/3 C. Wheat Germ
    1 3/4C Unbleached Flour
    1 3/4 C Whole Wheat Flour
    1 TBSP Cinnamon
    1 tsp Baking Soda
    1 tsp Baking Powder
    1 C. Walnut Meats

Directions

Beat eggs until foamy: Add sugar, honey, oil, vanilla, applesauce and grated zuchinni. Mix well but lightly. Add dry ingredients and blend. Stir in nuts. Makes 2 loaves. Bake 1 hour at 325 Degree F.

    Very Good
    I'll try this one since you're using whole wheat flour, flax seeds and the wheat germ. I also like the idea of the walnuts; however, since I have pecans on hand right now, I'll use roasted pecans instead. After I purchase my gas and if I have a few cents left, I will buy walnuts for next time. - 5/19/11
