Ingredients

    2 boneless skinless chicken breasts
    1 c. cooked brown rice
    1/8 c. almonds, slivered
    1 orange, peeled sectioned, chopped
    1 apple, cored, chopped
    1/2 sweet onion, chopped
    1/2 green pepper, chopped
    1 c celery, chopped
    2 Tbsp. low fat mayonnaise
    2 Tbsp. low fat sour cream
    1 tsp. curry powder
    1 Tbsp. soy sauce

Directions

Boil chicken in water until done. Drain and chop into 1" pieces. Steam rice until al dente. Chill both chicken and rice while assembling salad. Cut up sectioned orange into smaller sections. In a large salad bowl combine oranges, chopped apple, onion, green pepper and celery and almonds. In a small bowl mix together mayonnaise, sour cream, soy sauce, curry powder until smooth.
When chicken and rice are well chilled add to vegetables. Pour dressing on top and toss gently.

Serving Size: Makes two large servings or three smaller servings
