Number of Servings: 12

Ingredients

    5 Large Eggs
    4 Egg Whites
    3/4 cup of Shredded Cheese
    100 oz of Extra Lean Ham (almost 4 oz) chopped
    1/4 Onion, chopped
    1 cup of Spinach
    Olive oil to grease pan and muffin tins

Directions

Preheat oven to 350
Grease muffin tins and set aside
Lightly grease frying pan.
Saute ham and onion until onion is translucent
Add spinach until wilted
Beat eggs and egg whites
Add ham mixture to egg bowl and stir
Fill muffin tins 2/3 full with egg mixture
Sprinke cheese on top of each muffin cup.

Bake at 350 for 20-25 min.
